Crab & Prawn Tian
with a Cream cheese, Chilli, Lime
& Coriander topping


Preparation
Mix together the cheese, finely cut lime zest, lime juice, red chilli de-seeded and finely chopped coriander and set aside. This can be done in advance.

Shred up the mixed leafs.

Take the ring cutter and place on the centre of one of the serving plates. Then divide all your ingredients into four.

Using the ring place the mixed leaf in the bottom, press this down. On top of this place your crab and pink prawns, then on top of this spread your chesse mix smoothing it off with a palette knife. Remove the ring and repeat this on your other 3 plates. Garnish each tian with 3 tiger prawns and the cracked black pepper. Dress with herb dressing and soft pink peppercorn.
